Roti Jala (Lace Pancakes) Recipe

OMG! I'm sure if you travelled to Malaysia, you'll see Roti Cheese, Roti Tissue, Roti Tower and so much more variety in every street corner restaurant. But this kind of crepe is more than basic. Roti Jala is a unique lace bread like a net with a thin texture. It usually goes well with meat and vegetarian curry dishes and of course a perfect evening snack and is widely used in Malay weddings and Hari Raya (Eid festivals). As it's hard to find Roti Jalas in London, you can make them at home. It is super easy and fun!
Ingredients:
* 2 cups of plain flour
* 280 ml water
* 200 ml coconut milk
* 2 large eggs
* 1/2 tsp salt
* 1 tsp tumeric powder
* Butter/Oil to grease the pan
Equipment:
* Plastic bottle with a hole puncture

Method:
1. In a large bowl, whisk together the flour, eggs, water, coconut milk, turmeric and salt until you have a smooth texture.
2. Fill the bottle with your pancake batter.
3. Heat a light greased pan with either butter or vegetable oil over a medium heat.
4. Then quickly invert the bottle like a drizzle motion in circles to form the net pattern.
5. Allow the pancakes to cook for a minute or two and make sure it doesn't burn.
6. Do not flip the pancake, but using a spatula, gently lift the pancake to the side then fold the pancake or roll it up. Serve with curry or if you like it sweet, there's nothing wrong with adding nutella or sugar.
