Simple No-Bake Cheesecake

You can't go wrong with a buttery biscuit base topped with a light vanilla cheesecake filling....

.....This dessert is so convenient when you're having friends and family over....There is no need to turn on the oven and all that jazz...It is quick and very easy to make....





Ingredients

For the crust:

*1 packet of crushed Graham Cream crackers (Alternatives can be digestives biscuits or lotus biscoffs)

*5 tbsp of melted butter

*50g Sugar

*Pinch of Salt

For the filling:

*450g Cream cheese (Philadelphia brand, you can use original or light)

*1 tsp of vanilla extract

*1 can of Condensed Milk

*Pinch of salt

Method:

1. Using a sealed food bag, put the cream crackers in and crush the biscuits with a

rolling dough until it crumbles.

2. In a large bowl, mix together digestive crumbs, butter, sugar, and salt. Once crumbly and soft, press into the bottom of a 20cm spring form pan and up the sides. Refrigerate this for 20 minutes whilst you go on to make the filling.

3. In another bowl, combine the cream cheese, vanilla extract, condensed milk and a pinch of salt.

4. Transfer this filling into the base crust.

5. Smooth the crust with a spatula, then chill the cheesecake overnight for 8 hours, covered with a paper towel or cling film. If you’re making this last minute, chill the cheesecake in the freezer for an hour before serving.
